Lemon grass is one of the world`s great flavours. As soon as the chopped or crushed stem hits hot oil or stock it infuses whatever it touches with subtle scent and taste. Despite the name it has no affinity with the sharp acidic aroma or cutting taste of a lemon. Don`t even think about substituting lemon juice for lemon grass. And don`t bother with the dried stuff either: lemon grass like root ginger is an ingredient that only works its magic when fresh.

The pale greenyellow sticks are the stem leaves at the base of a wiry grass. Inside and nearer to the root end the embryonic layers are softer pinker and sweeter providing the most exotic heady sap. This is the part that should be slivered and cooked with. Enough said.

The easiest way to open lemon grass without it falling apart is to give it a wallop with a rolling pin lay it down and give it two or three hard smashes.
