The bright green serrated leaves of rocket with their strong almost spicy taste and peppery finish are indispensable in a mixed salad. They are loved all over the Mediterranean particularly in Italy (the italians beloved rocket) in Greece (roka) and in Turkey. Rocket grows like a weed but it quickly goes to seed and the leaves should be picked young.
Traditionally it was harvested growing wild like dandelions. The younger leaves have a milder taste and a lovely texture and can be made into a salad by themselves perhaps with shavings of Parmesan on top as served in Italy. Alternatively when they are older and strongertasting they are better mixed with other salad greens and lettuces including radicchio. Young leaves can be used whole but older and coarser leaves are best first trimmed of thick stems.
The sharply appetising taste of rocket goes well with cheese fish and even fruit. The leaves are packed with vitamins C and B and folate.
Rocket is a peppery salad leaf plant known also as rucola rughetta rocket and roquette. The size of the leaf varies but the more mature and the bigger the leaves are the better and stronger the taste. Rucola di Capri is a wild rocket with very small leaves more like a herb than a salad plant.
Use as soon as possible washing it well and discarding yellowed leaves and tough stems.
