After being cleaned the wheat is moistened and allowed to temper when the bran hardens and can be easily separated. The wheat is passed between rollers winnowed and sifted several times over. Freshly milled white flour is pale yellow but changes colour with age. To quicken this process mills bleach the flour and then replace lost nutrients. Wholemeal flour contains the entire seed except a portion of the bran.

Reflned wheat flour is used for cakes and bread and is fine white and soft. Wholewheat flour is brownish and coarser because it contains more bran. Both grades of flour have a bland flavour that can be sweetened spiced or salted.

buying and storing
Flour can be bought in any supermarket. The flour you buy will determine the texture of your roti: brown gives a thicker coarser product whereas white will be finer. Health conscious
people believe that wholewheat flour is better because of the fibre it provides. An airtight container will keep insects away and it is best to use up all stock within 4 months.

other uses
A stiff dough made of flour salt and water can be moulded into decorative shapes baked painted and varnished to make wall hangings and other objects of beauty. If you ever break a glass a bit of dough used as a mop will pick up all the shards and is easily discarded.

culinary uses
Although white flour is also used for rotis it produces a sticky leathery dough and wholewheat is more popular. Flour is used in steamed or fried sweets and snacks in curries as a thickener and in milk desserts. Fish cutlets and patties are rolled in it before deep frying to give a crlsp coating. A dough made of flour is used to seal cooking pots effectively to steam the contents. Around the world flour is used in every cuisine to make bread cakes pies pastry soups stews batters and sauces.
