At the River Cafe we serve and use pugliese and ciabatta bread. Pugliese is a large round countr style loaf made with sourdough from the previous days batch. Its oflen made with a mixture of flours and has a good texture for bruschetta. Ciabatta made with olive oil resembles a slipper in shape. We use it in our bread soups and toasted in slices rubbed with garlic for crostini.
