Though celery seed is an important minor spice in India it is not very prolifically used. The celery that is grown now is an evolved descendant of a wild herb called smallage which grew all over Europe. indian celery is quite different to European. Slender stalks bear small leaves and the flavour is slightly more subtle.

How it grows
Celery grows to a height of 60 80cm and has conspicuously jointed stems. Celery seed is die dried ripe fruit of this herb. Celery grows in Scandinavla Africa Asia and the USA. In India it grows wild and is cultivated in the northwest.

Appearance and taste
Celay seeds are tiny and extremely light. They are tobacco brown in colour with longitudinal ridges. The seeds have a powerful smell. They taste somewhat bitter with a faint flavour of cumin.

Buying and storing
Celery is available fresh as bright yellow to green stalks with leaves or as dried seeds which can be ground to a powder. It is a good idea to buy whole celery seeds they are rarely used ground anyway. Also the powder is sometimes adulterated with linseed meal or worthless vegetable seeds. Store in a dry jar and use within 6 months.

Medicinal and other uses
Celry seeds are believed to be a tonic for asthma. An infusion of the seeds in water in the ratio of 1:20 is said to relieve rheumatism and calm the nerves. Celery seeds are often added to commercial birdseed. The essential oil is used in perfumery to make celery salt and to impart warmth and aroma to tonics.

Culinary uses
The seeds seem to complement the tangy flavour of tomato and are used in several tomato based indian curries. They are also spninided over breads before bating to give bite and fragrance.
