Italian potatoes and sweet peppers recipe and books|

225g red or green peppers
2 tablespoons olive oil
1 medium onion finely chopped
225g red ripe tomatoes peeled and chopped or 225g tin of italian tomatoes
salt and freshly milled black pepper
1 teaspoon chopped parsley (or 1 tablespoon fresh chopped basll leaves)
For this you need a large frying pan with some sort of lid that will cover the ingredients while you cook them.
Begin by chopping the pepper into 20mm squares.
Then peel and chop the potatoes into roughly 15mm cubes and dry them as much as possible in a clean teacloth.
Now heat the oil in the frying pan and soften the onion and pepper in it for 5 minutes add the garlic and cook for a further minute.
Then turn the heat up to high and add the potatoes.
Toss them around in the oil for about 5 minutes then pour in the tomatoes and a good seasoning of salt and freshly milled black pepper.
Turn the heat down to very low and put a lid on the pan and cook slowly for 40 minutes.
Serve sprinkled with some chopped parsley or if you are lucky enough to have some fresh chopped basil leaves.
Good with some spicy little italian sausages or top the potato with fried eggs and grated cheese and then flash it under the grill.
