Italian roast leg of lamb recipe and books

1 cup nicoise or kalamata olives pitted and chopped
2 tablespoons grated orange zest
2 tablespoons chopped fresh sage
2 tablespoons finely minced garlic
1 teaspoon chilli flakes
2 tablespoons finely chopped anchovies
2 tablespoons chopped oregano
1/2 teaspoon freshly ground pepper
1 leg of lamb
3 garlic cloves finely sliced

Pre heat oven to 200C/400F/gas mark 6.
Blend the first eight ingredients to a paste in a food processor.
Spread over the lamb.
Make a few incisions in the flesh and insert a sliver of garlic into each one.
Place the lamb on a rack in a roasting pan and roast for 13 minutes per lb.
Let it rest for 10 minutes before carving.

Add a little kick to your Sunday roast.
