Jewelled vegetable rice recipe and books

jewelled vegetable rice
ratan pulao
indian

6 tablespoons sunflower oil
1 teaspoon cumin seeds
4cm stick coriander
8 cloves
16 black peppercorns
8 cardamom
4 fresh green chillies chopped finely
150g carrot diced finely
150ggreen peas
90g French beans chopped
90g sweetconn
90g mushnooms sliced
300g bosmati rice washed and drained
2 tablespoons raisins
1 sheet edible silver foil (optional)
salt

Heat the oil in a heavy pan and add the cumin seeds.
When they pop add the whole spices.
Stir a couple of times and add the green chillies all the vegetables and salt.
Stir fry for 23 minutes.
Add the rice and fry until translucent.
Add 600ml of hot water mix gently and bring to the boil then lower heat cover and cook until all the vegetables are soft but still crisp.
Sene hot garnished with raisins and edible silver foil.
