Leek and potato soup recipe and books

3 good sized leeks
1 1/2pints white stock
1/2 gill cream
1 lb potatoes
1 1/2 oz margarine or butter
1/2 gill milk
seasoning
parsley

Slice the leeks using some of the green part to give a good colour
Heat the butter in the pan and cook the leeks for about 5 minutes taking care they do not discolour.
Add the sliced potatoes stock and seasoning.
Cook steadily for about 30 mins.
Sieve return to pan adding milk and cream then reheat without boiling.
Pour into hot soup tureen and stir in a little extra butter and chopped parsley.
Garnish with duchesse potatoe rings if wished.
  • Marie rose sauce
    (for Shrimp or Prawn Cocktail)

    5 tablespoons thick mayonnaise
    1 tablespoon tomato ketchup or thick tomato puree
    1 tablespoon Worcesterhhire sauce
    1 tablespoon lemon juice
    1 teaspoon finely chopped onion
    1 teaspoon finely chopped celery or 1/4 tspn celery salt when not in season
    salt to tastee

    Mix together all the ingredients
