Mackerel and tomato loaf recipe and books

mackerel and tomato loaf

28g butter
1 onionfinely chopped
420g can mackerel in tomato sauce
196g can of tomatoes drained and roughly chopped
140g white breaderumbs
salt and pepper
1 tsp lemon juice
2 tsp mixed herbs dried
1 tbsp fresh parsley finely chopped
125ml milk
1 egg lightly beaten

Method
I Melt butter add onions and cook until soft
2 Add mackerel tomatoes breadcrumbs seasoning lemon juice and herbs
3 Mix together well
4 Add milk and egg to rest of ingredients
5 Place into well greased loaf tin
6 Serve either hot or cold as a main course or starter

servings: 2 x 448g loaves
small oven: 180C1 1 1/2 hours
PRE HEATED bottom shelf
fan oven: 170C1 I l/2 hours
COLD START
