Madeira cake recipe and books

madeira cake

168g margarine
168g caster sugar
3 eggs
112g selfraisingflour
112g plainflour
pinch of salt
grated rind of l lemon

Method
1 Cream together margarine and sugar until light and fluffy
2 Beat in eggs one at a time
3 Foid in sieved flours salt and lemon rind
4 Place mixture in greased 7in/178mm tin and bake in preheated oven

Variations:—
Walnut Cake—add 30z (84g) walnuts (chopped) and 1/2tsp vanilla essence after adding flour.
Cherry Cake—add 60z (168g) glace cherries (chopped) after adding flour

small oven: 150°C—1 1/213/4 hours
PREHEATED bottom shelf
fan oven: 130°C—1 1/213/4 hours
PREHEATED
