2 x 100g soft goats cheese rounds
For the marinade
8 roughly chopped fresh flatleaf parsley sprigs
8 fresh basil sprigs
1 tbsp chopped fresh oregano
2 garlic cloves chopped
1/2 tsp dried chilli flakes
juice of 1/2 lemon
150ml extra virgin olive oil
coarsely ground black pepper
For the salad
350g small ripe tomatoes
coarse sea salt
100g rocket or mixed leaves
1 mild onion thinly sliced
Slice goats cheese in half horizontally to make four rounds.
Arrange in a lightly oiled shallow dish.
Make the marinade: blend ingredients until fairly smooth then pour over the cheese.
Cover and chill for at least 2 hours spooning marinade over the cheese occasionally.
Preheat oven to l90C/375F/Gas Mark 5.
cut tomatoes in half and arrange cut side up in a baking tin.
Sprinkle with salt and roast for 4560 minutes until soft.
Leave to cool.
About 30 minutes before serving remove cheese from fridge.
Arrange the salad leaves on a serving platter.
Add tomatoes onion and top with cheese and remaining marinade.
