80ml oz milk
400g lean minced beef
1OOg bacon minced
1 clove garlic finely chopped
salt pepper ground allspice
1 tablespoon chopped parsley
75g grated Parmesan cheese
grated rind 1 lemon
oil for frying
flour for coating
3 tablespoons olive oil
2 onions chopped
400g tomatoes skinned de seeded and chopped
salt pepper dried basil thyme
400ml pint stock
Soak the breadcrumbs in the milk then drain squeezing out excess liquid.
Mix the breadcrumbs with the beef bacon garlic salt pepper allspice parsley eggs cheese and lemon rind.
Shape into little balls about 3cm inches across.
Place side by side on a wooden board cover with cling film and put in the refrigerator to chill for 40 minutes.
Meanwhile make the sauce.
Heat the oil in a pan and saute the onions until they begin to soften.
Add the tomatoes and cook over a high heat for 10 minutes.
Season with salt pepper basil thyme and sugar.
Pour in the stock.
Cover and simmer gently for 15 minutes.
If you want an absolutely smooth sauce you can put it through a sieve.
To fry the meatballs heat some oil in a frying pan.
Roll the meatballs in flour and put half of them in the pan.
Fry over moderate heat until golden brown on all sides about 8 minutes.
Keep turning them as you fry them so that they keep their round shape.
Take them out of the pan drain and place on a hot dish.
Add more oil to the pan and fry the remaining meatballs.
To serve pour the hot tomato sauce over the meatballs.
