Meatballs in onions and cream recipe and books

meatballs in onions and cream

4 slices white bread crusts removed
175ml milk
4 onions sliced
1 sprig rosemary
45g butter
450g lean minced beef
2 tbsp finely chopped parsley
1 tsp dijon mustard
200ml cr¸me fra"che or soured cream
paprika
salt and pepper

Soak the bread in the milk for 20 minutes.
Meanwhile sweat the onions with the rosemary in the butter very slowly in a covered pan until tender.
Drain the milk from the bread and squeeze dry.
Break it up with a fork then mix with beef parsley mustard salt and pepper.
Use your hands to mix thoroughly then roll into balls of about walnut size.
Put in with the onions cover and cook gently turning carefully after about 10 minutes.
Cook on the other side for another five minutes.
They should be soft not browned and just cooked through.
Add the cream and heat stirring it in gently around the meatballs.
Simmer until slightly thickened then season and dust with paprika.
Serve over noodles or rice.
