Milanese roast veal recipe and books|

I.5 kg rolled loin of veal
2 cloves garlic crushed
2 tablespoons chopped parsley
1 teaspoon each dried rosemary marjoram
600ml pint stock
1 teaspoon cornflour
75g canned tomato puree
Rub pepper and garlic crushed with salt into the joint.
Melt the butter in a roasting pan brown the joint on all sides 5 to 11 minutes.
Sprinkle the parsley rosemary and marjoram over the meat.
Pour the stock into the pan.
Roast at 200¡C/400¡F/gas 6 for 1 hour 35 minutes.
Take the joint out of the pan and put on a hot dish.
Mix the cornflour with a little cold water add the tomato puree and stir into the meat juices left in the pan.
Bring the sauce to the boil and serve with the meat.
