Minced lamb with green peas recipe and books

1 teaspoon sugar
6 tablespoons sunflower oil
10 black peppercorns
4 star anise
2 medium onions chopped finely
2 teaspoons ginger minced
2 teaspoons garlic minced
8 tablespoons tomato purŽe
300g lamb minced
150g (Soz) green peas shelled if fresh or frozen
1 teaspoon chilli powder
1 teaspoon turmeric powder
1 teaspoon garam masala powder
2 tablespoons coriander leaves chopped
salt

Heat a kadai or wok and add the sugar.
Allow it to caramelise then add the oil.
When the oil is hot add the pepper and star anise and fry for a minute.
Add the onions.
Fry until golden then add the ginger and garlic.
Stir a few times and add the tomato puree.
Cook until the oil separates.
Then add the mince greer peas powder spices and sit.
Cover and cook on a low heat until the lamb is done.
This dish should be served hot garnished with the chopped coriander

Kheema Mutter is especially popular with Punjabi and Sindhi communities. This dish could be served with rice rotis or even pasta.
