1 kg pike
1 egg whitr lightly beaten
2 tablespoons tiour
1/2 tablespoon salt
2 tablespoons fine dry bread crumbs
50g margarine or butter
1 small yellow onion finely chopped
30ml light cream
Clean and rinse the fish.
Sprinkle with a little fresh lemon juice.
Brush with beaten egg white and dip the fish in the flour mixed with salt and bread crumbs.
Place the fish in a buttered baking dish and sprinkle with chopped onion; dot with margarine or butter.
Bake in a 200 to 225¡ oven for 25 to 30 minutes.
Baste the fish now and then.
When it begins to brown add the cream and continue basting.
Cod whitefish eel and other fish may be prepared in the same way.
