2 red onions skinned and quartered
4 plum tomatoes halved lengthways
8 fat cloves of garlic whole and unpeeled
1 or 2 sprigs of rosemary or thyme if available
Preheat the oven to 220C (425F gas mark 7).
Generously oil an ovenproof dish big enough to take all the vegetables in a snug single layer.
Put in the onion quarters whole courgettes and halved tomatoes (cut side up) and tuck the cloves of garlic— and sprigs of herbs if using
—among the vegetables.
Drizle over 5 generous tablespoons of olive oil and sprinkle with coarse salt.
Roast for about 4045 minutes until the vegetables are very tender
basting a couple of times.
Serve hot or warm with good bread to mop up the juices.
Dont forget to eat the garlic which will have baked to a delicious cream inside its skin.
