baked aubergine slices with red peppers and pine nuts

2 medium aubergines
100ml olive oil
thyme
2 red peppers quartered cored and seeded
pine nuts
raisins
mint leaves
black pepper

Preheat the oven to 200C/400F/gas mark 6.
Slice the aubergines about 1cm thick in rounds or lengthways.
Brush a baking sheet with a little olive oil and arrange the slices on it in one layer.
Add the red peppers
Brush generously with olive oil sprinkle with a little thyme though it should be fresh rather than dried and then with some salt and coarsely ground pepper.
Bake until tender about 1520 minutes.
Dot over a few pine nuts and raisins grill for a minute to colour the nuts and then scatter with torn mint leaves and coarsely ground black pepper.
Serve with thick cold yoghurt into which you have stirred some more chopped mint.
