Pan fried trout recipe and books

pan fried trout

50g butter
2 large trout filleted
2 tbsps chopped parsley
1 tbsp chopped dill tarragon or chervil
juice of half a lemon

Heat the butter in a large shallow pan over a moderate heat.
When the butter starts to froth and bubble put in the fillets skin side down.
Cook until the skin is golden spooning the hot butter over the fish from time to time.
It should take about 7 to 8 minutes to cook the fish through depending on their size.
Remove the fish and put on warm plates.
Add the herbs to the butter squeeze in the lemon juice and pour over the fish.
Eat immediately.
