10 anchovy fillets rinsed and dried
1 tablespoon olive oil
300ml tomato passata
2 garlic cloves finely chopped
2 tablespoons rinsed capers
cooked pasta for 4
50g breadcrumbs fried in butter till golden
Grated Parmesan cheese to serve
Chop the anchovies a little and cook them in the olive oil until they almost melt into the oil.
Add the tomato passata which can be tinned crushed tomatoes at a push and the chopped garlic. Simmer for 10 minutes over a gentle heat then stir in the capers and season carefully with salt and plenty of black pepper.
Any sort of pasta is suitable here ribbons tubes or some of the more unusual shapes.
Have the pasta ready (the sauce will wait or the pasta) then toss the pasta in the tomato sauce. Serve immediately piping hot scattered with hot buttered breadcrumbs and grated Parmesan cheese.
