A simple yet elegant dish of pasta dressed with a creamy tomato sauce and spiked with vodka. A few teaspoons of caviar turns it into something eminently celebratory.
4 tbsp passata or skinned deseeded and liquidised fresh tomatoes
6 tbsp double cream
1 tbsp vodka
salt and freshly ground black
23 tsp caviar
2 tsp chopped fresh chives
Bring a large pan of lightly
salted water to the boil and tip in the penne.
Cook according to instructions until al dente.
Drain well and transfer to a warm serving dish.
While the pasta cooks place passata or liquidised fresh tomatoes and cream in a small pan.
Simmer for 5 minutes to thicken slightly stirring occasionally.
Draw off the heat let the bubbles subside stir in the vodka and season.
When the pasta is ready bring tomato mixture back to the boil and pour over the pasta.
Spoon the caviar on top and sprinkle with chives.
Toss at the table and serve.
If you really cant bear the thought of throwing your caviar into a bowl of pasta replace with 11Og of finely diced and deseeded tomatoes for a more everyday concoction.
