1kg fresh salmon
3/4 tablespoon salt
1 bay leaf
5 white peppercorns
a few dill sprigs
2 slices yellow onion
500ml warm water
100ml swedish table vinegar
Clean and rinse the fish cut in pieces 3 to 4 cm thick.
Put the fish in a low wide saucepan or fish kettle.
Add the spices dill and onion.
Pour in the water mixed with vinegar.
Let simmer for 8 to 10 minutes.
Transfer the fish to a serving dish and pour the hot stock over.
Serve with cold mustard sauce or mayonnaise.
Eel mackerel lumpfish and herring may be prepared in the same way.
