Piquant lamb chops recipe and books

Agnello Piccante

8 best end of neck lamb chops
4 tablespoons olive oil
2 cloves garlic chopped
2 teaspoons chopped marf oram
2 tablespoons chopped parsley
1 1/2 tablespoons capers drained and chopped
salt and pepper
1 tablespoon lemon juice

To garnish
saute potatoes
lemon wedges

Lay the chops side by side in a dish spoon the oil over them and sprinkle with the garlic.
Cover and marinate for 2 hours turning once.
Strain the marinade into a large frying pan add the herbs and capers and heat gently.
Add the chops and fry for 5 minutes on each side.
Season with salt and pepper to taste sprinkle with the lemon juice and cook covered over low heat for 5 minutes.
Pile the potatoes on a warmed serving dish and arrange the chops around the edge.
Spoon some of the pan juices over the chops and garnish the dish with lemon wedges.
