4 medium rainbow trout cleaned
150ml dry cider (or use lemonade)
a few parsley stalks
1 medium onion peeled and sliced
2 slices of lemon
6 black peppercorns
150ml double cream
freshly ground black pepper
sprigs of parsley to garnish
Simmer the trout in a covered pan in the cider with the parsley stalks onion lemon and peppercorns for 1012 minutes until the fish are just cooked.
Strain the liquor into a small pan and bring it rapidly to the boil.
Immediately lower the heat stir in the cream and just heat through.
Remove from the heat and season the sauce with salt and pepper.
Pour the sauce over the fish and garnish with the parsley sprigs.
Very small new potatoes may be cooked in the same time and are a perfect accompaniment.
