Pork chops in ginger beer recipe and books

1 oz. butter
4 pork chops trimmed of excess fat
1 large onion peeled and sliced into rings
4 oz (celery scrubbed) trimmed and diced
2 carrots peeled and thinly sliced
1 oz flour
1 pt ginger beer
1 beef stock cube dissolved in 4 tables hot water
Dash Worcestershire sauce
juice of lemon
8 oz tomatoes skinned seeded and chopped
Salt & freshly ground black pepper

Melt butter in heavy pan and cook the pork chops quickly over moderate heat
until golden brown remove and place in casserole.
Add onion celery and carrot to pan and fry until tender sprinkle in flour and cook stirring constantly for 1 minute. Gradually stir in the ginger beer and stock and bring to boil stirring constantly. When sauce has thickened stir in Worcestershire sauce lemon juice tomatoes and seasoning to taste. Pour sauce over chops cover casserole and cook in moderate oven (350F or mark 4) for 45 minutes or until pork is tender.
