Porter cake recipe and books

So you would like to know how to make Porter cake recipe! It is not hard, follow the steps below and enjoy your own creation. Check our books section as well!


porter cake

225g butter
225g brown sugar
300ml stout such as Guinness Original
zest of 1 orange
225g sultanas
225g raisins
110g mixed peel
450g plain white flour
1/2 teaspoon bicarbonate of soda
2 teaspoons mixed spice
110g glace cherries
3 eggs

Melt the butter and sugar in a saucepan with the stout.
Add the orange zest and all the fruit except the cherries.
Bring to the boil and simmer for 34 minutes stirring frequently.
Remove from the heat and allow to cool until lukewarm.
Sieve the flour soda and spice into a mixing bowl.
Add the fruit mixture to the flour and then add the cherries.
Whisk the eggs and gradually mix in well.
Spoon the mixture into a prepared 23cm round cake tin and bake in the middle of a preheated oven (180C/350F/Gas 4) for about 1.5 hours.
If you wish you may pour 4 tablespoons ofstout over the cake when it is cooked (prick the cake with a skewer first).
Keep a day before cutting.
This cake will keep for several weeks in a tin.
