Potato puree recipe and books

1kg potatoes
200ml double cream
Salt and pepper
150g butter diced

Peel and wash the potatoes.
Cut the potatoes into even pieces and cook until very tender.
Drain and dry well.
Bring the cream with some seasoning to the boil.
Pass the potatoes through the fine disc of a mouli legumes.
Add the cream and the butter stirring continuously until smooth.
Adjust the seasoning.

We try to use either Desiree or Cyprus potatoes since these two varieties contain less starch than other potatoes and therefore make a lighter less sticky puree. When made properly this is the single best potato accompaniment to any meal. We do not use olive oil just plenty of good unsalted butter.
