2 pounds unpeeled small red potatoes
1/4 cup watercress leaves
1/4 cup white wine vinegar
2 tablespoons dijon mustard
1/4 teaspoon salt
1/4 teaspoon ground pepper
1/2 cup olive oil
4 celery stalks thinly sliced
2 cups watercress leaves
1 3/4 cups (8 ounces) blue cheese crumbled
Cook potatoes in salted boiling water until tender about 12 minutes.
Let cool and cut into quarters.
In a blender or food processor process all dressing ingredients until smooth.
In a large bowl combine potatoes celery watercress and half of blue cheese.
Toss with dressing and top with remaining cheese.
