Red baked chicken recipe and books

For the marinade:
150ml yoghkurt beaten
2 teaspoons ginger paste
2 teaspoons garlic paste
1 teaspoon turmeric powder
1 teaspoon chilli powder
2 teaspoons tandoori masala powder

8 chicken legs
3 tablespoons sunflower oil
4 lemon wedges
onion rings

Mix all the ingredients for the marinade.
Drop in the chicken and coat well.
Reserve for 30 minutes.
Line a baking tray with a sheet of cooking foil.
Smear 1 tablespoon of the oil over the sheet.
Place the chicken on the tray without overlapping the pieces.
Pour over any remaining marinade.
Drizzle the remaining oil on top and bake in a moderately hot oven (200C 400F gas mark 6) for 30 minutes or until the chicken is cooked.
Then put under a hot grill to dry up the juices and to brown the chicken a bit.
Serve hot garnished with lemon wedges and onion rings.

Alternatively you can barbecue the mannated chicken legs. (Note: If you can get hold of a tandoor skewer the chicken and bake at a hot temperature.)

Recipe is a hallmark dish of Punjab and is tremendously popular with non vegetarian indians.
