Roast lamb with rosemary recipe and books

Abbacchio al Forno
italian

1 x 1.5 kg leg of lamb
24 cloves garlic sliced
34 rosemary sprigs salt and pepper
1 tablespoon oil
150ml dry white wine or light stock
rosemary sprigs to garnish

Make small incisions in the lamb and insert a piece of garlic and a few rosemary leaves into each.
Season with salt and pepper and place on a rack in a roasting pan.
Spoon over the oil.
Cook in a preheated moderate oven 180C (350F) Gas Mark 4 for about 2 hours.
Transfer to a warmed serving dish and keep hot.
Skim the fat from the pan juices add the wine or stock and bring to the boil stirring until thickened.
Strain into a sauce boat and serve with the meat.
