Salad of smoked trout cumcumber and radishes recipe and books

dressing:
6 tablespoons fresh lemon juice
2 teaspoons dijon mustard
2 tablespoons creme fraiche or heavy cream
1/2 cup vegetable oil
1 1/2 easpoons minced fresh tarragon leaves or 1/2 teaspoon dried tarragon
salt and freshly ground peppy to taste

1 pound smoked trout skinned and boned
1 cucumber peeled halved lengthwise and seeded
1/4 cup snipped fresh dill
2 cups red radishes
1 cup white radishes
3 bunches watercress stemmed
1/2 cup plus 2 tablespoons snipped fresh chives

In a small bowl whisk together all dressing ingredients until well blended. Cut trout into strips and put in a medium bowl.
Slice cucumber very thin and add to bowl with half of dill.
Toss with half of dressing.
Slice radishes very thin and put in a bowl with watercress and 1/2 cup chives.
Toss with remaining dressing.
On large serving platter make a bed of watercress mixture.
Mound trout mixture on top.
Sprinkle with remaining dill and 2 tablespoons chives.
