Seared salmon and asparagus mini kebabs with caper and parsl recipe and books

seared salmon and asparagus mini kebabs with caper and parsley mayonnaise

450g salmon fillet cut into 25mm cubes
1 tbsp olive oil
350g asparagus each spear cut diagonally into 3

for the mayonnaise:
300m1 readymade mayonnaise
2 tbsp capers chopped
2 tsp fresh tarragon chopped
3 tbsp fresh parsley chopped

Mix together the mayonnaise ingredients. Oil a ridged castiron grill pan heat until very hot then sear the fish for 4 to 5 minutes on each side.
Cook the asparagus on the pan for 4 to 5 minutes.
Thread asparagus and salmon onto small wooden skewers and serve with the mayonnaise.
