juice of 1 lemon
salt and pepper
6 salmon steaks each about 150g
1.5kg new potatoes medium sized cooked cooled and diced across

Dressing:
2 tbspns sugar

2 tbspns white wine vinegar
2 tbspns chopped dill
2 tbspns dijon mustard
140ml olive oil

To serve:
6 sprigs of dill

Make a marinade for the salmon with the oil lemon juice and seasoning.
Arrange the fish in a single layer in a shallow dish and pour over the marinade turning the pieces over so they are well coated.

Drape the warm salmon slices on top drizle over the remaining dressing and top each serving with a sprig of dill.
