Seared tuna nicoise with sweet red pepper dressing recipe and books

4 small tomatoes on the vine possible
100g French beans
1 red pepper quartered and seeded
4 tuna steaks about 150g each
4 large new potatoes boiled and sliced
2 eggs boiled for 5 minutes shelled and quartered
12 black olives
4 tbsp tapenade
salt and black pepper
sweet red pepper dressing (qv) to serve

Plunge the tomatoes into boiling water for 30 seconds then remove with a slotted spoon and plunge into cold water.
Drain then remove skins.
Cook beans for 3 minutes and plunge into cold water.
Drain.
Pre heat the grill to high.
Grill the peppers.
Sear the tuna in a hot pan for 1 minute on each side (it should be pink in the centre).
Arrange the tomatoes beans pepper slices potatoes eggs and olives on plates dot with the tapenade and place tuna steaks on top.
Season then drizzle over the dressing.
