Sicilian vegetable casserole recipe and books

So you would like to know how to make Sicilian vegetable casserole recipe! It is not hard, follow the steps below and enjoy your own creation. Check our books section as well!

5 tablespoons olive oil
600g aubergines peeled and diced
400g tomatoes skinned
seeded and coarsley chopped
600g green and red peppers seeded and cut into strips
2 onions sliced
1 clove garlic finely chopped
salt cayenne paprika
100g black olives stoned and sliced
100g green olives stoned and sliced
3 tablespoons chopped parsley

Heat the oil in a stewpan and add all the vegetables including garlic.
Saute for 5 minutes shaking the pan so that the vegetables do not stick.
Season with salt cayenne and paprika.
Cover the pan and let the vegetables cook in their own juices for 20 minutes.
Add a little water during cooking if necessary.
Add the olives and cook for another 10 minutes.
Sprinkle parsley over the stew before serving.
