Chicken goulash recipe and books|

4 chicken breasts skinned
freshly ground black pepper
4 teaspoons paprika
2 tablespoons vegetable oil
2 medium onions peeled and thinly sliced
2 green peppers cored seeded and sliced
3 tablespoons tomato puree
300ml plain unsweetened yogurt
175g mushrooms sliced
sprigs of parsley to garnish
Sprinkle the chicken with salt pepper and 1 teaspoon of the paprika.
Fry the chicken in the oil over moderate heat for 3 minutes on each side.
Remove the chicken and fry the onions and peppers stirring once or twice for 4 minutes.
Stir in the remaining paprika and the tomato puree then the yogurt.
Return the chicken to the pan bring the sauce to the boil cover and cook for 35 minutes turning the chicken once during this time.
Add the mushrooms and continue cooking for 10 minutes.
Taste the sauce and adjust the seasoning if necessary.
Garnish with the parsley sprigs.
Boiled rice or noodles are the perfect partner for the dish.
If you choose noodles try tossing them in plenty of butter with 1 teaspoon of caraway seeds for added flavour.
