Chicken jambalaya with cajun spiced butter recipe and books

chicken jambalaya with cajun spiced butter

vol auvent cases15 king size or 44 medium
oil for frying
1lb chicken cut into bite size pieces
1 large onion chopped
2 medium carrots cut into marchsticks
1 small red pepper cut into matchsticks
1 small green pepper cut into matchsticks
4oz chopped pineapple

For the sauce
2 tablespns soya sauce
2 tablespns Worcester sauce
3 tablespns vinegar
3 tablespns brown sugar
3 tablespns tomato puree
3 tablespes pineapple juice
3 tablespns white wine
quarter to half pint water
half teaspn ground ginger
salt and pepper
I tablespn cornflour

Fry the chicken vegetables and pineapple quickly over a high heat.
Remove from the pan.
Mix all the ingredients for the sauce in a pan and bring to the boil stirring continuously until the sauce thickens.
Return the vegetables to the pan and cook slowly in the sauce for twenty minutes or until chicken and vegetables are cooked.
Fill the baked vol au vent cases with the sweet and sour chicken.
Serve hot.
