2 chicken carcasses roasted or raw plus giblets
1 red onion peeled and halved
2 medium carrots peeled
4 celery stalks
2 garlic cloves peeled
a few flat leaf parsley stalks
5 black peppercorns
3 bay leaves or thyme sprigs sea salt
Put all the ingredients except the sea salt into a large saucepan cover with 2.5 3L cold water and bring to the boil skimming off the scum as it comes to the surface.
Lower the heat and simmer very gently for 1 1/2 hours.
Stain season with salt and leave to cool.
If not using immediately keep in a refrigerator for up to two days.
