Chinese red roast pork recipe and books

450g pork fillet preferably in one piece
1 tablespoon hoi sin sauce
1 tablespoon soy sauce
2 level teaspoons soft brown sugar
1 level teaspoon five spice powder
1 dove garlic crushed
1 teaEpoon finely grated fresh ginger

Serve either hot or cold eg with South sea noodles or cold with
the Chinese green vegetable salad. It tastes better if you can leave it to marinate overnight.

Preheat oven to gas mark 7 42 5 F (220 C) .

The day before (or at least a couple of hours before) you need it trim any fat from the pork but leave the fillet whole.
Then in a small bowl mix together the hoi sin sauce soy sauce sugar five spice powder garlic and ginger.
Place the meat in a shallow dish rub or brush lightly with a little oil and then
coat it with the sauce.
The best way to do this is to use your hands turning the meat over so that you get a complete coating.
Now leave it to marinate and soak up all the flavours. Place the pork on a rack in a roasting tin and spoon ova any marinade then brush lightly with a little more oil and roast in the oven for 10 minutes.
Then reduce the heat to gas mark 4 350F (180C) and cook for a further 30 minutes.
Serve carved into thin slices.
