Beef noodle soup recipe and books

900g boneless shin or chuck
1 whole cinnamon stick or Chinese cinnamon bark
2 star anise (optional)
2 tablespoons light soy sauce
6 dried red chillis
2 dried citrus peels soaked and finely chopped (optional)
1 teaspoon salt
1.1L Chicken Stock
350g egg noodles fresh or cried

Cut the meat into 5cm cubes.
Combine the meat cubes with all the other ingredients except the noodles in a large pot.
Bring the mixture to the boil and then lower the heat to a simmer.
Skim any scum or fat off the surface for the first 15 minutes.
Then cover the pot and simmer gently for 221/2 hours or until the meat is tender.
Cook the noodles for 35 minutes in a pot of boiling hot water.
Then put them in cold water until you are ready to use them.
When the meat is tender drain the noodles put them into the pot and let them warm through. Ladle some meat broth and noodles into individual serving bowls. (This dish re heats well.)

Re heats wonderfully and is especially delicious on cold winter nights. Dont use an expensive cut of meat for this recipe. Even stewing steak is too extravagant as it has insufficient flavour and will be too dry. Use a coarse gristly cut of beef such as chuck or shin.
