Creamy spiced chicken recipe and books

creamy spiced chicken

800g raw boned chicken (ie 4 small chicken breasts) cut into largish chunks
75g unsalted butter
2 medium onions thinly sliced
2 bayleaves
1 teaspoon salt
1/4 teaspoon coarsely ground black pepper
1/4 teaspoon garam masala
1/4 teaspoon ground coriander
A pinch of ground turmeric
1 tablespoon Warcestershire sauce
75g small mushrooms
175ml double cream

In a heavy based saucepan or flameproof casserole melt the butter over a medium heat and add the sliced onion.
Fry this until soft and golden brown about 10 minutes then add the bayleaves and stir fry for a further 1 minute.
Now add the chicken pieces to the onions lower the heat and continue to stir fry for another 5 minutes.
After that add all the spices and seasoning and Worcestershire sauce and continue to stir fry for a further 710 minutes making sure all the chicken pieces are well coated.
Then add the mushrooms and stir these in then gradually add the cream mixing all the ingredients well together.
Finally put a lid on and simmer gently over a very low heat or about 710 minutes or until the chicken is cooked.
Serve this with Spiced pilau rice and chutney.
