224g margarine
224g caster sugar
4 eggs
308g selfraisingflour sieved

Method
1 Place margarine and sugar in a basin and cream together until light and fluffy
2 Add eggs one at a time and beat well into the mixture
3 Fold in the sifted flour until thoroughly incorporated
4 Place a teaspoon of the mixture into greaseproof cake cases
5 Bake until golden brown and springy to touch

Variations
Chocolate—substitute loz (28g) self raising flour with loz (28g) cocoa
Orange/Lemon—grated rind of 1 orange or lemon and 2tbsp juice
Cherry—add loz (28g) glace cherries chopped
Fruit—add loz (28g) mixed dried fruit
Add to the mixture after the addition of eggs

small oven: 190°C—1520 minutes
PREHEATED bottom shelf
fan oven: 170°C—1520 minutes
PREHEATED
