smoked salmon tartare on sliced cucumbers

smoked salmon tartare:
8 ounces smoked salmon
1 small red onion
2 tablespoons fresh lemon juice
2 tablespoons extrarirgin olive oil
salt and freshly ground pepper to taste 2 tbspns capers drained and rinsed
1 tablespoon snipped fresh dill

1 english (hothouse) cucumber sliced
1/4 inch thick
2 tablespoons dijon mustard
tiny dill sprigs for garnish

to make tartare:
In a blender or food processor process smoked salmon onion lemon juice
and olive oil to a rough paste.
Add salt and pepper and stir in capers and dill.
Spread cucumber slices with a film of mustard.
Top each with about 1 teaspoon salmon tartare.
Garnish each slice with a sprig of dill.

Never hurry a cucumber. Give it a chance. Slice into it as you would a melon.
