2 cups dried black beans soaked in cold water overnight
2 tablespoons fresh lime juice
3 tablespoons red wine vinegar
1 teaspoon ground cumin

1/2cup extra virgin olive oil
2 red bell peppers roasted peeled and cut into strips
2 cups diced cooked chicken
2 cups diced plum tomatoes
`/z cup coarsely chopped fresh coriander
1 small red onion chopped
salt and freshly ground pepper to taste
six 10 inch flour tortillas
2 cups (8 ounce) shredded cheddar cheese
1 head iceberg lettuce shredded
Cook in salted simmering water until tender about 45 minutes.
Drain and let cool.
In a small bowl whisk all dressing ingredients together.
In a large bowl combine beans peppers chicken tomatoes coriander and onion.
Toss with dressing and add salt and pepper.
Top each flour tortilla with some cheese and then lettuce.
Spread some chicken filling over lettuce.
Tuck in sides and roll like a cigar.
Cut in half on the diagonal.
