75g Caster Sugar
75g Plain Flour
2.5ml Baking Powder
Warm bowl and beaters.
Beat eggs and sugar on Speed 3 until thick and fluffy.
Sift flour three times with the baking powder.
Sprinkle half over the egg mixture and fold in as gently as possible with a metal spoon.
Repeat with the second half of flour.
Turn the mixture into a greased cake tin15cm diameter and 7.5cm deep.
Bake in a moderate oven 350¡F/180¡C/Gas Mark 4 for 50 minutes approximately.
For a sandwich use two 20 cm tins and bake for 1520 minutes at 400¡F/200¡C/Gas Mark 6.
