Spring vegetable soup recipe and books|

subizon ka shorba
1 tablespoons sunflower oil
4 tablespoons carrots grated
60g French beans chopped finely
150g mushrooms sliced
1 teaspoon tamarind paste diluted in 4 teaspoons water
1 teaspoon ginger grated
1 teaspoon sugar
12 blades lemon grass 4cm long
12 Holy Basil leaves
Heat the oil and add the vegetables.
Stir fry for 5 minutes then add the tamarind paste and stir well for a minute.
Pour in the water.
Add all the other ingredients and bring to the boil.
Then reduce the heat and simmer until all the vegetables are cooked but crunchy
Pick out and discard the lemon grass.
This soup is a good starter for a light summery meal.
