Steak and saute potatoes recipe and books

2 steaks (ribeye rump sirloin or fillet)
light olive or sunfiower oil butter or duck/goosefat
2 large baking potatoes peeled and cut into chunks

At least 10 minutes before cooking place
a griddle or heavy frying pan on to the heat. Once it is very hot smear with a little
olive oil and heat again until smouldng.
Season the steaks with cracked pepper and sea
salt.
Place in the pan seasoned side down.
Season the top.
Do not touch the steaks for 2 minutes then turn.
Cook over a medium heat for a further
2 to 3 minutes depending on thickness.
Steaks 2.5cm/1 in thick will take 5 to 7 minutes total cooking (before resting) to become medium rare.
Meanwhile heat 1/2tbsp butter/fat plus
1 tbsp oil in another frying pan until hot.
Add the potatoes fry for about 20 minutes until tender and crispy.
Season well.
Remove the steaks place on a wine rack over a grih pan to rest for at least 5 minutes somewhere barely warm.
Serve on heated plates with sauteed potatoes green salad and a pot of dijon rnustud.

Cook the meat from room temperawm not straight from the fridge.
