Steamed beef meatballs recipe and books

350g minced beef
1 egg white
l tablespoon very cold water
1/2 teaspoon salt
1 tablespoon light soy sauce
1 teaspoon freshly ground black pepper
2 teaspoons sesame oil
1 tablespoon coriander finely chopped
11/2 tablespoons sprlng onions finely chopped
1 teaspoon cornflour
1 teaspoon sugar

Mix the beef in a blender or food processor for a few seconds.
Slowly add the egg white and cold water and mix them for a few more seconds until they are fully incorporated into the meat.
Then add the rest of the ingredients and mix for about a minute until the meat mixture has become a light paste.
Using your hands form the mixture into 3.5cm balls about the size of a golf ball. (This recipe makes about 10 balls.)
Put the meatballs on a plate and set it into a steamer. (AIternatively put a rack into a wok or deep pan filled with simmering hot water.)
Cover and steam the meat balls gently for about 20 minutes.
Pour off any liquid which has accumulated on the plate.
Put the steamed meatballs on a clean platter and serve.

The meatballs re heat well by steaming good for dinner parties.
