This is a northern Chinese beef speciality. I have adapted it by substituting fresh orange peel for the dried tangerine peel which is sometimes hard to get. The Chinese always use peel which has been dried. The older the skin the more prized the flavour. Its quite easy to make your own dried peel but I find the tartness of the fresh orange peel works just as nicely to balance the robust taste of the beef. This is an easy dish to make and is a pleasant change of flavour from the usual stir fried beef recipes.
